For many families, the holiday feast just isn’t the same without mashed potatoes on the table. The addition of garlic provides the perfect counterpoint to our signature maple glazed smokehouse ham.
2 to 4 large heads of garlic
½ cup freshly grated Parmesan cheese
¼ cup butter, softened
1 teaspoon salt
1 green onion, chopped
Ground pepper
¼ cup milk
Preheat oven to 375°F.
Fill a 4-6 qt. Dutch oven 1/3 full with salted water and bring to a boil. Add potatoes and enough water to cover potatoes. Place lid on Dutch Oven and simmer potatoes for 20 to 25 minutes or until tender. Add garlic to the potatoes the last 15 minutes of cooking. Add Parmesan cheese, sour cream and butter to blender or food processor. Cover and process until just smooth. Drain potato mixture and transfer to a very large mixing bowl. Add cheese mixture, salt and pepper. Beat with an electric mixer on low speed or by hand until potatoes are smooth. Stir in green onion. Add milk to reach desired consistency. Top with a pat of butter and serve. Makes 8-10 servings.
