Quiche Lorraine
The smoky sweet flavor of Harrington’s lean Canadian Bacon creates a quiche that has been known to disappear as soon as it is set on the holiday brunch or breakfast table. We suggest making two!
- 1 unbaked 9-inch pie shell
- 3 slices Canadian bacon, finely diced
- 4 eggs, beaten slightly
- 3/4 cup milk
- 1 cup light cream
- 1 cup grated Swiss cheese
- 1/4 cup finely chopped parsley
- Pinch of nutmeg
- Salt and pepper to taste
Preheat oven to 450°F.
Bake pie shell for 10 minutes in 450° oven. Remove from oven and sprinkle with bacon and cheese. Mix remaining ingredients and pour into pie crust. Bake in 450° oven for 15 minutes. Reduce heat to 350° and cook for 10 minutes more until a knife inserted in center comes out clean. Serve warm. 6 servings.
